Feb. Farm Update

Hello everyone,

I am right now selling pasture raised goose, eggs, and pork at the Corning Indoor Winter Farmers Market.

This is every Sat. 11am till 3pm. Variety of other local producers are there too with hoop house and storage vegetables, bake goods, maple syrup, honey, meat products, and other items. In the same room as the information desk for Market Street which is connected by an arch way to The Old World Cafe. On Sat. there is lots of parking and it is free when you park in a parking garage or the lots behind Market Street.

I am busy on the farm doing construction projects which there is not time for in the growing season. built a snow plow for my oxen, also working on stalls and pens for cattle and hens as well as fence repair.

I plan on getting back into vegetables again this year. Last several years I have also planned to do this but it has not worked out, I am thinking this has mostly been due to scale and preparation issues. So this year I am going to attempt to plan to counter this by one growing only in 9 12X60 beds by the barns, and two only doing prep tillage and bare fallow on the larger 1/8 acre vegetable plots, with the only planting there being a winter garden in Oct which will center around Garlic and spinach and other crops that easily live through our winters. Geese: taking reservations!


I have at least 20 geese this year that I am selling.

They are 8-9lbs and I sell them for $45 a bird. I have a butcher who just does poultry process and freeze them so they are all ready to go.

I give you complete direction on how to cook one too. They are juicy compared to turkey and all dark meat, as well as young birds that fall apart when cooked. With all the exercise they get on pasture they are far from fatty as some goose can be, still when cooked over a bed of spiced rice the juices which are all absorbed into the rice are simply amazing.

Hello, I now have plenty of eggs as spring has started to make headway.  I’ll have them on my porch in a cooler as well as I have enough for larger orders.  As long as I have more than 15 dozen in stock you can get 5 dozen for $16 dollars(same as the price of four dozen!) call to set up these larger orders.

Hello, I’m writing to wish everyone Happy Holidays and thank you for your patronage.

I’ve been cooking up pies and will be roasting a goose for sharing at a couple of Holiday gatherings.   Food is one my favorite parts of this time of the year.



This past year I’ve been selling at Eastside Market in Elmira and here at the farm too, usually on weekend I’d have vegetables available, and eggs all week.

Right now I am going to the Corning Winter Market which is the 1st and 3rd Sat. each month.  Next market is 1/7.  Mostly selling pork by the cut.

I’ve also found a group on Facebook that kinda goes with the farm, check it out.

Hello I have been caught up in construction over this growing season so no vegetables growing other than onions.  I plan on having veggies by next year though.  This is an interesting a challenging phase for the farm and my life as I am not so much figuring out what to do but making many changes, but this pause in production is needed so that I can grow.

Also I’ve a couple of events going on.

One, I’ll be at the Heritage Festival at the Troy Fair Grounds the third weekend in September with a pair of calves to demonstrate training them to be oxen as well as letting folks give a try at driving them themselves.

Also I am doing an event Oct. 20th at the farm here with PASA Grower Education

Andy Lyon, of Spring Meadows Farm in Bradford county, will be hosting the second installment of a PASA Field Day called Happy Animals Work for a Living II.  This full day event will cover how pastured livestock can be used to improve the land through their daily interaction while they grow and produce products on pasture. Andy will lead the participants through his farm to see his pasturing systems for American Buff geese and Idaho Pastured pigs as well as how he uses a hen wagon with his calves. All of Andy’s methods are a way to reduce his labor inputs while improving his pastures. These methods could be used by a homesteader or a diverse grass based farm. Andy will also demonstrate how to use oxen as working animals and participants will get a chance to test drive the team! Andy is welcoming participants to stick around after the day as well to get a little more practice and to ask additional questions about the oxen team if need be.

*A catered lunch made from seasonal ingredients from Andy’s farm is included in the price of registration.

More about Andy Lyon: Andy Lyon grew up in North Central Pennsylvania where the farming traditions were passed on from Yankee settlers and where oxen teams working in the fields were a typical sight. Andy described how, when he was a boy, all the older neighbors shared stories about farming with oxen. Although Andy’s father learned to train a team when he was just four years old, as farm equipment modernized, he traded in the oxen team for a tractor.  

Andy also grew up farming with modern equipment, but began looking honestly at what having money tied up in a tractor was costing him. He explained how, at the age of 31, he decided to “get back to the tradition of my Yankee heritage and took to working two teams of oxen on my pasture-based farm.”

Today – Andy is working to create a healthy ecosystem at Spring Meadows Farm. In return, the farm business benefits from less investment in heavy equipment, freedom from oil prices, enhanced animal and plant health and increased profit…producing more quality food to fuel a farmer and making farming full-time possible. Spring Meadows Farm now markets grass-fed beef, pastured eggs, garlic, vegetables and pork. Milk cows supply most of the protein for the hens and hogs, and much of the grass-fed fat in the farmers’ diets. 

Andy is looking forward to hosting his second PASA Field Day and demonstrating how things have changed and improved since we last visited with him in 2012.


Markets – This spring I’ll be at Mansfield Growers Market starting Friday May 8th and also Wellsboro Growers Market starting Thur. June 25th.   Though I will not be at any market 3rd full week of May and again the 3rd week of June as I take these weeks to catch up on various garden and livestock jobs so I am more prepared for the markets at the height of summer.

Pastured Livestock – Been busy with young animals as is usual for spring, have calves from my cattle all born and am brooding 70 future laying hens so I can double the size of my laying flock.  Also the geese are starting to set on their eggs and I have two sows who are going to have little ones.  So I should have plenty of variety of meats available this year.

Garden-I am putting in a new set of beds near my new barn for growing for the summer markets, then the old garden area I plan on growing storage vegetables that I can sell in the fall as well as at the Corning Winter Market.

Construction- Still doing plenty.  Mostly now working on shelter and pasture for my young animal, then I plan on getting on to subdividing some pastures that till now I’ll divided with temporary fences.

Still have plenty of spinach and lettuce available as well as eggs.    Order ahead to pick them up there at the farm or at Live Well Upstate at Wed. 6:30pm or 8pm.
